George Dickel No. 12 is a Tennessee whisky made at Cascade Hollow in Tullahoma and bottled at 90 proof (45%). The 12 is a recipe designation, not an age statement.
It follows the Lincoln County Process: the spirit is chilled to around 40 degrees Fahrenheit and filtered through sugar maple charcoal before it goes into barrel. The spelling without an E is deliberate, a nod to Scotch.
Deep gold in the glass, it has a nose of sweet corn, vanilla, sugared citrus, honey and butterscotch, with earthy tobacco beneath. The palate is rich and creamy, running from caramel, maple and cinnamon to black pepper, leather and pecan, and it finishes long on smoky oak and vanilla.
