Cascade Moon 15 Year Old Barrel Proof is a spirit aged for 15 years in the single-storey rickhouses at Cascade Hollow. It went into the barrel at 115 proof.
Conditions in those barrels were unusual, and the proof fell to 79.8, which is below the minimum for a spirit to be classified as whisky.
The nose is aromatic and tropical, and the finish brings leather and oak. It can be enjoyed neat or over ice.
