Gin Mare Mediterranean Gin (70cl)

Gin Mare is a Mediterranean gin made in an old fishing village near Barcelona, in a custom-made still housed in an 18th-century chapel. It is sold in a 70cl bottle. The botanicals are orange, lemon, juniper berries, coriander, cardamom, rosemary, basil, thyme and arbequina olives. Each is macerated delicately and distilled independently. The acidity of the olives changes from year to year, so every distillation differs slightly. The nose is earthy, with olive, citrus and Mediterranean herbs. The palate is smooth and savoury, with cardamom and lemon peel, and the finish is balanced and restrained.
