GlenAllachie – Sinteis Part IV 2015 Mongolian Virgin Oak (55.8%)

GlenAllachie Sinteis Series Part IV is a single malt distilled in 2015, from a series in which Billy Walker explores unusual cask combinations. It matured first in Pedro Ximénez and Oloroso sherry casks, then in casks of Mongolian oak, Quercus mongolica, a dense, fine-grained wood that can take more than 100 years to mature and is rarely used for whisky casks. It is bottled without added colour and without chill filtration. The nose combines fresh pastry and butterscotch with brandy fruit, cocoa, dark treacle, cinnamon and candied ginger. The palate brings candied hazelnuts, plum syrup and warm baking spices, then baked orange, vanilla, mocha, mānuka honey and fig jam.
