High West Old Fashioned Barrel Finished Cocktail (75cl, 43%)

This is a ready-to-pour Old Fashioned from High West Distillery in Utah, made with bourbon and rye whiskeys, raw sugar simple syrup and bitters. The blend is rested in second-use rye whiskey barrels, which brings the components together before bottling. Using both whiskeys is deliberate: the bourbon adds earthy-sweet corn notes, while the rye contributes dry spice. It needs no mixing, and is poured over a large ice cube with an orange peel twist. On the nose there is cassia bark, liquorice root, eucalyptus and orange spice tea. The palate brings orange zest, dried cherry, sassafras and allspice, and the finish carries black pepper, cola and cinnamon.
