A 15 year old Highland Park from the Scotch Malt Whisky Society, bottled as cask 4.394 under the name Pâtisseries and Perfumeries. It was distilled in 2010 and is one of 591 bottles from a single bourbon cask that was finished in an ex-bodega Oloroso butt.
On the nose, old-style sherry meets wispy Orcadian peat smoke, with waxes, dried mushrooms, hessian, souchong tea and flinty coastal notes. The palate is gamey, leathery and salty, with natural tar, medicinal notes and dry, heathery peat low down. The finish is long, with verbena, aged herbal liqueurs and old-style ales.
