Hillrock Double Cask Rye Whiskey Port Finish

This is a rye whiskey from Hillrock Estate Distillery, made from organically grown rye on the estate. It is matured in three stages: first in traditional oak casks, then in charred American white oak barrels, and finally in port casks. The nose is bold, with maple syrup, roasted nuts, raisins, allspice and clove. The palate is full-bodied and rich, with sweet, warming caramel and ginger, followed by rye bread, raw cacao, strawberries and dried fruit. The finish is long and warm, with demerara and cacao.
