Ambir is a single malt from Holyrood Distillery in Edinburgh, matured in first-fill bourbon barrels and Oloroso sherry casks. It is bottled at 49.8% in a 70cl bottle. Holyrood was founded in 2019 and brought single malt production back to the Scottish capital after more than a century. The distillery draws on Edinburgh's brewing heritage and experiments with malt varieties, fermentation and special casks.
