Noir Bordeaux Yeast is a single malt from Holyrood Distillery in Edinburgh, bottled at 47.1% in a 70cl bottle. As the name says, Bordeaux yeast is part of its make, and the whisky was matured in bourbon casks. Holyrood was founded in 2019 and returned single malt distilling to the Scottish capital after more than 100 years. The distillery experiments with malt varieties, fermentation and special casks, inspired by Edinburgh's brewing past.
