Horse with no Name Plain is a Texas bourbon at 45%, matured for at least three years in new, charred 200-litre casks of American white oak. The mash bill is 71% Texas corn, 21% red winter wheat and 8% malted barley, fermented with a yeast culture taken from organically grown pecans and distilled twice in a column still.
It is reduced with Black Forest spring water and bottled in a flask-style bottle modelled on a cut-glass hip flask of the 1920s. This plain version has no habanero spirit added. It is chill-filtered and has no added colour.
Vanilla, caramel and coconut lead the nose, with nutmeg, clove, toffee, leather and honey. The palate is full, with vanilla, caramel, nut butter and toasted oak. The finish is long, warm and soft.
