Isle of Raasay – Signature (46.4%)

Isle of Raasay Signature is a single malt from the distillery on the island of Raasay in the Inner Hebrides, bottled at 46.4% ABV. The distillery opened in 2017 and is the island's first. The spirit is twice distilled in copper stills. Peated and unpeated whiskies are blended after maturing in rye whiskey casks, new Chinkapin oak casks and Bordeaux red wine casks. The nose has caramel, honey, red fruit and ginger with a typical smokiness. The palate brings ripe figs, Medjool dates, apricots and raisins, then spiced milk chocolate. The finish is woody, with cinnamon, pipe tobacco and spice.
