Kanosuke Hioki Pot Still 2024 Edition is a limited Japanese whisky in a 70cl bottle, bottled at 55% ABV. It was made at Hioki Distillery, the sister site to Kanosuke in Kagoshima, which draws on a background in shochu making.
The spirit is made from malted and unmalted barley and distilled under vacuum pressure in stainless steel pot stills, a method taken from shochu. Maturation is in a mix of new American white oak, ex-bourbon and re-charred ex-shochu casks, which brings a gentle sweetness and a light bitterness.
