Kilchoman – Fino Sherry Cask Matured 2023 (70cl, 50%)

This is a limited Islay single malt from Kilchoman, matured in Fino sherry casks and bottled at 50% in a 70cl bottle. It is heavily peated. Fino is a comparatively dry style of sherry, and the cask influence here sits alongside Kilchoman's peat smoke rather than sweetening it. The nose offers peat smoke, citrus zest, roasted nuts, vanilla and a maritime spiciness. On the palate it is smoky and dry, with malt, citrus fruit, nuts, spice and oak. The finish is long, smoky and dry, with salty spice and a note of sherry.
