Kilchoman – Genesis Harvest Stage 2 Days 6-12 2021 (70cl, 49.2%)

This is an Islay single malt from Kilchoman, released in 2021 as Harvest Stage 2 of the Genesis project. The project follows the whisky from barley field to glass, and Days 6-12 refers to the phase in which the barley was processed. Kilchoman is a farm distillery that uses its own Islay barley and its own floor maltings, and distils and matures on site. This bottling is peated and comes at 49.2% in a 70cl bottle. The nose combines fresh peat smoke with citrus, green fruit and malty sweetness. On the palate it is robust and lively, with smoke, vanilla, cereal, spice and a little fruit. The finish is smoky, fresh and lightly salty.
