Kilchoman – Genesis Stage 2 (49.2%)

Kilchoman Genesis follows the 1130 days from barley to bottle at Kilchoman, a distillery that wants to revive the tradition of farm distilling. Stage 2 looks at malting, and this bottling is made from Concerto and Laureate barley malted on site, bottled at 49.2%. The whisky was matured in 75% bourbon casks, 20% Sauternes casks and 5% sherry casks. The notes describe heathery peat smoke with grapes, ginger and a little citrus on the nose. The palate is sweet like caramelised brown sugar, with aniseed, vanilla and gentle wine notes before dark chocolate and iodine smoke. The finish is long, peaty and herbal.
