Kilchoman – Maury Cask Matured (70cl, 50%)

Kilchoman Maury Cask Matured is an Islay single malt matured entirely in former Maury wine casks, not simply finished in them. Maury is a fortified wine from Roussillon in southern France. Nineteen Maury butts were filled in June 2021 and bottled in February 2026, after 4.5 years of maturation. The whisky has 50 ppm phenols and was bottled undiluted at 50%, giving around 15,000 bottles of 70cl. The nose offers figs, raisins and dates with salted caramel, orange peel and a little peat smoke. The palate has pipe tobacco, dark chocolate, molasses and warming spice. The finish brings dried fruit, cocoa, earthy peat smoke and a dry, subtle spiciness.
