Kilchoman Sauternes Cask is a limited edition Islay single malt bottled at 50% ABV. It was matured entirely in ex-Sauternes wine casks, rather than finished in them. Anthony Wills, founder of Kilchoman, chose a mix of fresh and refill Sauternes barriques from 2017/2018 for it.
The whisky is non-chill-filtered and has no added colouring. Sweet fruit and butterscotch sit alongside the peat smoke of Islay.
The nose is creamy and buttery with ripe fruit, a little sea air and light peat smoke. Butterscotch, floral notes and tropical, candied fruit lead the palate, and the finish returns to sweetness with a lingering touch of smoke.
