Lindores Abbey – Casks of Lindores Sherry Cask (49.4%)

This is the third release in the Casks of Lindores series from Lindores Abbey, matured solely in Oloroso sherry casks and bottled at 49.4%. The strength refers to 1494, the year of the first written record of whisky distilling in Scotland, when King James IV commissioned the Lindores monk Brother Cor to make aqua vitae. Distilling returned to the abbey grounds in 2017, in copper stills. The notes describe a fruity nose of prunes, milk chocolate and vanilla. The palate is creamy with dried fruit, molasses and dark chocolate, and the finish is long with dark fruit and bitter chocolate.
