This Macallan is a 25 year old Speyside single malt, distilled on 24 September 1997 and bottled on 10 July 2023 by Signatory Vintage for Symington's Choice in its Cask Strength Collection.
It matured in a first fill Oloroso sherry butt and was bottled at a cask strength of 54.8%, without chill-filtration or added colour. The edition runs to 649 numbered bottles and comes in a metal tin.
The nose offers raisins, candied citrus and toffee, with hints of chocolate-covered dates and polished mahogany. The palate brings dark fruit compote, molasses and baking spices on a silky texture. The finish is long, with sherried oak, gently spiced cocoa and sweet tobacco.
