Macaloney's The Peat Project Ex-Bourbon is a peated single malt bottled at 46% from a single ex-Bourbon cask. It is natural colour and non-chill-filtered.
The barley was malted locally and smoked at the distillery to 54 ppm, using Washington State peat infused with sugar-kelp seaweed. The spirit was double distilled in copper pot stills and matured fully in the one cask.
The nose is sea breeze and beach-wood bonfire, with ripe pear, banana, marmalade and honeycomb. The palate is sweet, creamy and viscous, with sugar kelp, butterscotch, nectarines and pineapple. The finish is long, with walnut, oiled oak, seashells and smoked oysters.
