Madre Mezcal Espadin (75cl, 40%)

Madre Espadin is an artisanal joven mezcal from San Dionisio in Oaxaca, made from 100% Espadin agave and bottled at 40%. It is made by the Jose Garcia Morales family. The agave comes from three terroirs: Miahuatlan, Matatlan and San Dionisio. Each harvest is roasted separately in earthen pits, fermented with well water and wild yeast, then double-distilled in a family copper pot still before the batches are blended. The nose is bright with grapefruit peel, lime zest, sweet smoke and dried sage. The palate is citrus-led with fresh-cut grass, gentle smoke and vanilla. The finish is lingering, lightly smoky, earthy and dry.
