Maiz Nation Whiskey Añejo is a Mexican corn whiskey made from four ancient Oaxacan corn varieties: Chalqueño, Bolita, Tepecintle and Olotillo. The corn is stoneground on site, mashed with rainwater and distilled slowly in small solar-powered copper alembics at the SolCraft Distillery in San Agustín Etla.
The Añejo is matured in new, deep-charred American oak under Oaxaca's climate, which adds caramel, vanilla and char to the fruity corn character. It is bottled at 48% ABV and is non-chill-filtered.
Tasting notes describe roasted corn, caramel and vanilla, with deep oak char, dried fruit and baking spice beneath, and a long, warming finish that keeps a floral corn note.
