Mannochmore – 12 Year Old Flora & Fauna

This is a 12 year old Mannochmore single malt from the Flora & Fauna series, a range of single malt bottlings in which each distillery is given its own creature as a symbol on the label. The nose changes with a little water, so it is worth trying the whisky both ways. Neat, it opens sweet and lightly malty, then turns green, with green apples and a touch of sulphur. With water it becomes fresh and fruity, with the sulphur sitting in the background. The palate is fresh and clean, with good acidity and a balanced dryness. The finish is drier than Speyside might lead you to expect.
