This is an organic Dolcetto d'Alba DOC from Azienda Agricola Mario Giribaldi in Piemonte. The grapes come from the Schiena del Crottine vineyard in Rodello, a 4.85 hectare south-south-west facing slope at 460 metres with stony soil mixed with marl and limestone. The grapes macerate for nine days with regular pumping over, ferment at controlled temperature, then spend about two months in oak and at least six months in bottle. It is ruby with purple highlights, with violets and ripe fruit on the nose. The palate is dry, intense and well structured, ending soft. Serve at 16-18°C with red meat, beef, veal or ravioli.
