Meikle Tòir The Chinquapin One is a peated Speyside single malt made at The GlenAllachie distillery under Billy Walker. It is five years old and bottled at 48% ABV in a 70cl bottle, with a phenol level of around 35 PPM.
The malt is dried over continental peat from St. Fergus in Aberdeenshire and fermented for 160 hours. It matures first in ex-Bourbon American oak, then in virgin Chinquapin oak from the Ozarks in Missouri, a wood that adds sweet spice, nuts and toasted oak.
The nose has smouldering oak embers, burnt liquorice and honey, with ginger and orange peel. The palate is creamy, with cocoa, crème brûlée and toasted almonds, and the finish is long, warm and spiced.
