Never Never Oyster Shell Gin (70cl, 42%)

Never Never Oyster Shell Gin is a coastal gin from Never Never Distilling Co. in South Australia, bottled at 42% in a 70cl bottle. It is made with Pacific oysters and Kangaroo Island coastal salt, using the distillery's Triple Juniper process, and distilled in small batches. The shells add a gentle salinity and more weight in the mouth. The nose is bright and saline, with fresh citrus, juniper and sea spray. On the palate, lemon, pink pepper and coriander seed sit over a savoury, umami-rich backbone. The finish is long and delicately briny, with lingering citrus. It suits a Dry Martini or a gin and soda with a lemon wheel.
