North Star 15 Year Old is an independent single malt from Caol Ila on Islay, bottled by the Glasgow-based North Star Spirits in a 70cl bottle. It was distilled in 2011 and aged for 15 years in refill hogshead casks. It is bottled at 49.5% ABV without chill-filtration.
The nose combines soft peat smoke and sea air with lemon peel, orchard fruit, vanilla and warming spice. The palate is rich and textured, with smoky malt, citrus oils, ripe fruit and salinity, plus black pepper and oak spice. The long finish leaves peat smoke, sea salt, sweet malt and citrus zest.
