Ohishi Islay Cask Finish Whisky

Ohishi Islay Cask Finish is a Japanese whisky from Ohishi Distillery in Kumamoto prefecture, distilled entirely from rice and finished in Islay casks. About 30% of the rice is grown on the distillery's own estate, and the remaining 70% comes from the surrounding prefecture. Estate varieties include Hino hikari, Mori no kuma-san, Yamada Nishiki, Gohyaku Mangoku and Gin no Sato. Koi fish swim through the paddies and nibble the weeds. Because the rice ferments cleanly, the distillery uses a pot still made of stainless steel rather than copper.
