Ohishi – Port Cask Whisky (75cl, 43.4%)

Ohishi Port Cask is a Japanese whisky bottled at 43.4% in a 75cl bottle, matured in port casks. The distillery sits closest to the headwaters of the Kuma River, and 30% of its rice is grown in its own fields, using gohyakumanishi rice farmed with koi carp to control weeds, alongside mochi rice from Kumamoto Prefecture. It holds about 1200 sherry and brandy casks. It won Double Gold at the SF World Spirits Competition in 2025. The nose is baked oat cookie, walnut and allspice with a hint of rosehip, turning spicier with ground ginger and pepper. The palate is heavy and mouth-drawing, with toffee apple, cake mix, sultana and gentle spices, and the finish is dry, with fading fruit and chocolate cake.
