Paul John – Bold Single Malt

Paul John Bold is a heavily peated single malt from Goa, India. The peat is brought from Islay and used to dry the distillery's six-row Indian barley. The whisky matures in ex-bourbon casks and is bottled without added colour and without chill-filtering. On the nose there is toasted barley, dried grass, a little smoked herring, citrus peel, green apple and brown sugar. The palate brings honeyed oak and fruity coffee, with the Islay peat returning gently, then spicy porridge, lime and dry toast. The finish is peaty, with peppery oak.
