Paul John – Pedro Ximenez Select Cask Single Malt

This is a single malt from Paul John, made in Goa, India, and finished in Pedro Ximenez casks. Much of its character comes from the dark, intensely sweet Spanish dessert sherry that those casks held, and it has a dark copper colour. The nose has fig and apricot with a hint of banana. On the palate there is sweet barley, creamy butterscotch, dried fruits and Christmas cake. The finish is long, with chocolate fudge, orange peel and nuts that taste of wine.
