Rey Campero Espadín Joven Mezcal (75cl, 48%)

A joven mezcal from Rey Campero, a family collective in the village of Candelaria Yegolé in the Sierra Sur of Oaxaca. It is distilled from 100% Espadín, Agave angustifolia. The agave is cooked in a conical earthen pit, milled with a stone tahona and fermented in open-air wooden vats with ambient and wild yeasts. It is distilled twice in wood-fired copper alembic pot stills, then rested in glass for two months. The nose is damp soil and tree bark, like petrichor and forest floor. The palate turns to earthy green herbs, with a firm grip of oregano and coriander and a lift of citrus zest.
