Sierra Norte Rainbow Corn is a Mexican single-barrel whiskey distilled in Oaxaca by Douglas French, the master distiller behind Scorpion Mezcal. The mash is 85% native Oaxacan corn in white, yellow, red, purple and black, with 15% malted barley. It is double-distilled, first in stainless steel and then in copper pot stills, and aged for a minimum of two years in French oak barrels.
On the nose it shows sweet corn, dried fruit and warm spice. The palate is rich and full-bodied, with honey, toasted oak, a little pepper, cinnamon and cooked fruit, followed by a long, smooth finish of vanilla and lingering sweetness.
