Sullivans Cove – 16 Year Old American Oak Single Cask 2005 (70cl)

This is a 16 year old single cask Tasmanian single malt from Sullivans Cove, in a 70cl bottle. It comes from a second fill American oak cask and is bottle number one of 452. The cask began its life in the mid 1990s as virgin oak and has only ever held Sullivans Cove single malt, with no bourbon or sherry in its history. Second fill oak allows long maturation without the wood overpowering the spirit, so the distillery's character sits alongside a soft oak profile. The fruity esters from its copper Alembic still, Myrtle, come through.
