Sullivans Cove Double Cask DC087 is a single malt from Hobart, Tasmania, matured in two kinds of oak: American oak ex-bourbon casks and French oak ex-tawny and port casks.
The bourbon wood gives creamy sweetness, while the fortified-wine oak adds rich dark fruit. The whisky is deep golden amber with copper flashes.
On the nose are vanilla custard, honeycomb, apricot and fig, with cinnamon and clove. The palate is oily and mouth-coating, with butterscotch, stone fruit, raisin and dark chocolate. The finish is long and gently sweet, with honey, toffee and soft oak spice.
