Belgrove Distillery – White Rye Whiskey (50cl, 65.3%)

This is an unaged white rye whiskey from Belgrove Distillery in Tasmania, in a 50cl bottle at 65.3% ABV. It is made from 100 per cent rye grown by Peter Bignell, who distils it on a still he built himself. The spirit is clear and oily, and it leans towards aniseed and herbs rather than the usual whiskey profile. On the nose there is liquorice root, aniseed and fennel pollen, with grass, earth and a little icing sugar. The palate brings pastis-like aniseed, white pepper, ginger and coriander over a silky, creamy texture. The finish is medium in length, clean and herbal, with liquorice, mint and a gentle pepper warmth.
