The Dunbrody Bourbon Cask is an Irish whiskey distilled at the Great Northern Distillery in County Louth. The brand is named after an 1840s sailing ship that carried Irish families fleeing the Great Famine to America, and was founded by a descendant of one of its passengers.
Its mash bill is 71% corn, 20% rye and 9% barley, built to echo a high-rye American bourbon, and the whiskey is matured entirely in ex-bourbon barrels. It comes in a 70cl bottle.
The nose is vanilla and caramel with soft spices. The palate brings black tea, toffee, candied walnuts and orchard fruit, and the finish is sweet and peppery, with light vanilla and subtle rye spice.
