The Sevillian Room is a Highland single malt from The GlenDronach, part of the House Editions series. It is matured in three types of sherry cask: Oloroso, Pedro Ximénez and Palo Cortado. It is bottled at 43% in a one-litre bottle, with natural colour.
The Oloroso casks are described as adding spice and nutty depth, the Pedro Ximénez casks fruit and sweetness, and the Palo Cortado casks a drier, lighter edge. The distillery was founded in 1826.
The nose is Seville bitter orange with honeysuckle, toasted oak and aged leather. On the palate come warm manuka honey, roasted nuts, cinnamon and blood orange marmalade. The finish is long, with orange peel and roasted nuts.
