The Lark Distillery – Tasmanian Peated Single Malt (50cl, 46%)

This is a peated single malt from The Lark Distillery in Tasmania, bottled at 46% in a 50cl bottle. The colour is a deep amber. The smoke here is described as coming from eucalyptus branches and campfires rather than the heavier peat of Scotland. Sweet cereal malt sits alongside it, and the body is full but agile. On the nose there is smoked apricot, charred gum wood, old leather and a hint of ash, running into floral bush honey. The palate brings black tea, dark chocolate and toasted herbs, and the finish is long and earthy, with citrus oil and native spice.
