The Whistler Imperial Stout Finish (70cl, 43%)

This is an Irish blended whiskey from The Whistler, made up of 50% wheat whiskey, 35% malt whiskey and 15% grain whiskey. Each component matures separately in ex-bourbon casks before they are combined, and the blend then spends six months in imperial stout casks. It is bottled at 43% in a 70cl bottle, non-chill-filtered and of natural colour. The finishing casks were ex-sherry hogsheads that had held The Whistler 7 Year Old. Boyne Brewhouse then matured its 10.8% imperial stout in them for at least six months, and the whiskey went in as soon as they were emptied. The nose combines dark berries, bitter coffee and creamy cocoa. Cocoa, coffee and caramel follow on a creamy, full palate, and the finish is long and creamy.
