The Whistler P.X. I Love You is an Irish single malt with a Pedro Ximénez sherry finish, bottled at 46% in a 70cl bottle. It is made from 100% malted barley by Boann Distillery.
The whiskey matures first in ex-bourbon casks, then spends at least nine months in casks that held Pedro Ximénez sherry. It is non-chill-filtered and takes its colour only from the casks.
Sherry leads the nose, with dried berries, raisins, cherries, candied orange and brown sugar. The palate opens with clear wood notes and a viscous texture, then dried fruit, walnut, citrus and a touch of leather. The finish is long and dry, with walnut, dried fruit and dark chocolate.
