Thompson Bros. Highland Single Malt 19 Year Old is a cask-strength Scotch whisky chosen by the brothers Phil and Simon Thompson, who work in Dornoch, Sutherland. It was distilled on 21 June 2007, matured in refill hogsheads and bottled in July 2026 at 57.1%, without chill-filtration or added colour.
The nose combines peaty malt and burnt sage with maritime hints of shellfish and oily rope, plus roasted hazelnuts. On the palate, citrus and ripe apple meet heather honey, spiced ham, capers and salty slate. The finish is long, smoky and nutty, with lasting peat, a little peanut and dry coastal spice.
