Tullahoma 2011 – Valinch & Mallet (2016) (70cl, 48.8%)

A single cask Tennessee sour mash whisky from the Tullahoma region, distilled in 2011 and bottled in 2016 at five years old by Valinch & Mallet for their Dumpy Series. Just 244 bottles were filled. It matured entirely in virgin oak and was bottled non-chill-filtered at 48.8%, in a 70cl bottle. The nose offers vanilla, honey, caramelised sugars and lightly toasted oak. The palate is powerful but controlled, with toffee, corn sweetness, spicy wood and a hint of pepper, followed by a long, warm, wood-driven finish.
