WhistlePig Boss Hog V, The Spirit of Mauve, is a 13 year old straight rye finished in Calvados casks. It is the fifth edition of the annual Boss Hog series, named for Mauve, the farm's pig, and her love of apples.
Each edition is a single barrel bottled at proof. The Calvados casks, which held Normandy apple brandy, add apple sweetness and a delicate French oak character to a high-rye base. It is bottled by hand at WhistlePig Farm in Shoreham, Vermont, and comes in a coffin-shaped box.
The nose has apple, cinnamon, vanilla, rye spice and a little pear. The palate brings spiced apple, warm oak and vanilla over a bold grain base. The finish is long and smooth, with apple sweetness and rye spice.
