This is the sixth Boss Hog from WhistlePig, a single barrel straight rye bottled at 120 to 122 proof. It was finished in Japanese Umeshu casks from the Kitaya brewery on Kyushu island, and it is described as the first American whiskey finished using koji fermentation, a result of the collaboration with Kitaya.
The name honours Jokichi Takamine, the Japanese-American chemist who brought koji fermentation to American whiskey production in the 1890s.
The nose is ripe plum, warm rye spice and subtle floral notes with a light savoury edge. On the palate, bold rye meets plum fruit. The long finish brings warm spice, dried fruit and Japanese oak.
