The Boss Hog XII Feather & Flame is the twelfth release in WhistlePig's Boss Hog series. It is a single barrel straight rye from a 100% rye mashbill, hand bottled on the WhistlePig farm in Vermont at barrel strength, 108.4 proof (54.2%), without chill filtration. This bottle comes from Barrel No. 116.
The rye matured in new American oak, then took a second finish in barrels seasoned with pulque curado de cacao, made from agave, cacao and three Mexican chillies: chiltepín, guajillo and pasilla. The idea came from the Aztec drinks pulque and xocolatl.
The nose offers caramel, dark chocolate, orange zest, roasted cocoa nibs and baking spice. Citrus leads on the palate, with soft oak, cocoa and an earthy warmth. The finish is long and savoury, with cacao giving way to chilli.
