White Heather 21 Years Old is a blended Scotch whisky in a 70cl bottle, bottled at 48% ABV without added colour or chill filtration. It is a personal project of Billy Walker of Glenallachie.
The blend spent 18 years in first fill American barrels, sherry butts, second fill barrels and hogsheads. It then went on to further maturation in PX puncheons, Oloroso puncheons and virgin oak casks from the Appalachians. Around 2,000 bottles exist.
It is described as having delicate notes of heather honey, butterscotch and peat fire.
