Wilderness Trail Small Batch is a Kentucky straight bourbon from the Danville distillery, bottled in bond at 50% (100 proof) in a 750ml bottle. That means one distilling season at one distillery and at least four years in a bonded warehouse.
The distillery uses sweet mash rather than sour mash, starting each fermentation fresh. The spirit goes into the barrel at 110 proof, against an industry standard of 125, and the barrels are cooper select with 18 month air dried staves, toasted and given a number four char. It is non-chill-filtered.
Tasting notes describe butterscotch, ripe peach and red apple on the nose, with malt, brown sugar, cinnamon, black pepper and orange peel on the palate.
