Wilderness Trail Small Batch Kentucky Straight Bourbon is bottled in bond at 50% (100 proof), from the distillery in Danville, Kentucky. Bottled in bond means a single distilling season at one distillery and at least four years in a bonded warehouse. The distillery defines small batch as a maximum of twenty barrels from a single fermenter. It uses a sweet mash, and the whiskey goes into the barrel at 110 proof. The barrels are cooper select, made from staves air dried for eighteen months and given a number four char. The bourbon is non-chill-filtered. On the nose there is butterscotch, ripe peach and red apple, with oak and brown sugar. Malt, brown sugar and cinnamon feature on the palate, and the finish is warm and spiced.
