Yoichi Discovery Aromatic Yeast is a limited edition from the Yoichi distillery, released in 2022 and built around the theme of yeast. It was fermented at a low temperature, which brings to mind the floral and fruity character of Ginjo sake. The bottle returns to the distillery's characteristic style, with peat that changes in mood. It is most present on the first nose and in the middle of the palate, running through a range of fruity and floral notes.
